The Chickpea Gods Have Given Sydney A Tiny, Delicious Hummus Bar

Simply Hummus is the first dedicated Sydney hummus bar and this is undeniable proof that the world is good and kind.

Inspired by traditional hummusiya hummus bars, Simply Hummus in Darlinghurst serves one dish: a big bowl of freshly made hummus with pita bread. If it ain’t broke, don’t fix it; just serve it up on a plate and let me at it.

The hummus here has been perfected over 40 iterations of the recipe, and what’s served up is a thick chickpea blend with tahini, olive oil (that’s infused with a secret ingredient), cumin, salt and lemon.

Anyone who likes their hummus on the nutty and sweet side is in luck, and there’s no doubt you’ll love the drizzle of paprika oil and sprinkling of za’atar (a Middle Eastern spice mix) on top. A bowl costs $10 and, yes, it’s a meal in and of itself.

Want more? Consider adding some toppings like falafel, tomato salad, mushrooms and maple syrup-caramelised onions, but the hummus bowl has been designed to be eaten on its own. Although you can also order carrot sticks if you’re a dedicated dipper.

Simply Hummus is BYO beer; the right way to eat hummus is with a cold beer, according to the owners, and you don’t need to say anything else to convince us of this pairing made in heaven.

It’s open for lunch every weekday, and you can dine on warm hummus for dinner from Thursday to Sunday. Food goals!
