Our gelato overlords have resurr-egg-cted three of their most popular specials and transformed them into divine gelato eggs. This is a food fusion we can get behind.

The Holy Trinity coll-egg-tion (can’t stop, won’t stop) includes one of each flavour — Holy Hot Cross Buns, Lord Lamington and Saint Pistachio.

Messina is known for its egg-stravagant (okay, I’ll stop) flavours that blend freshly-made gelato with hunks of other ingredients. So what’s in these bad boys? The Holy Hot Cross Bun egg is made up of a hot cross bun gelato inside with chunks of the pastries mixed in, a gooey caramel yolk and a milk choc glaze coating for the shell.

Crack into the Lord Lamington and you’ll find a coconut gelato filled with layers of raspberry gel, coconut and chocolate dacquoise and milk chocolate parfait, all dipped in a devilish red choc glaze and sprinkled with desiccated coconut.

The Saint Pistachio is Italian nougat filled with chocolate honey gelato and pistachio fudge. Drool.

The collection was available from select stores in Sydney (Bondi, Darlinghurst, Rosebery, Newtown, Miranda, Parra, Penrith and Tramsheds), Melbourne (Fitzroy), Brisbane (South Brisbane and Fortitude Valley) and Canberra (Braddon). Unfortunately the regular stock has now sold out. There will be a small amount available from the Gelato Messina Rosebery HQ on Easter Saturday April 20.

The collection costs $79 and each set comes in a custom branded box — a fair price to pay for godly gelato goodness.
