Coogee Pavilion’s Brand-New Floor Is All About Seafood, Tapas and Cocktails

No matter the day, Merivale’s multi-level beachside destination Coogee Pavilion is always buzzing.

Now the venue is about to get even busier with the long-awaited opening of its middle level.

Up until now, you could dine on the family-friendly ground floor bar and restaurant, or head upstairs for shared plates and the adults-only rooftop with an expansive wrap-around view.

Regulars knew big things were planned for the under-construction middle level. After a long wait, Merivale has finally declared it open for business.

Three distinct venues have taken over the new Coogee Pavilion space: the restaurant Mimi’s, cocktail bar Will’s and wine and tapas bar Una Más.

The three openings are overseen by Coogee Pavilion’s Executive Chef Jordan Toft, who also designed the menu at Merivale’s two-hatted Bert’s Bar and Brasserie. Taking cues from the sea, expect a Mediterranean-inspired menu with distinct Australian produce.

Fittingly, each new addition boasts an unbeatable outlook across to Coogee Beach.

Mimi’s is all about good food prepared simply, with seafood as a particular star. Think headliners like roasted spanner crab, warmed Queensland scallop and charred Murray cod. Not for nothing, the restaurant also has a 600-bottle wine list, with a focus on Chablis.

At Will’s, the cocktails also take cues from the Italian coastline, with names like L’Americano and The High Tide. (And yes, they take pride in a well-made Martini too.)

Una Más continues the theme of bright, uncomplicated seaside flavours. Their tapas menu draws on Spain and Australia with plates like aged quail and harissa, crudo and salted pineapple and scarlet prawns, garlic and chilli.
