I Tried Making TikTok’s ‘Cloud Bread’, The Thirst Trap Dessert That’s Impossible To Ruin
Cloud bread is a culinary thirst trap, and my god are we parched.
If you’ve spent any time in foodie TikTok lately, you’ve probably seen a video of ‘cloud bread’. It’s essentially something between a soft loaf of bread and a pavlova, and it looks unimaginably pretty.
Because I’m a sucker for unattainable desserts, I decided to make cloud bread for myself. It’s only got three ingredients and promised to be quick to make.
The premise is simple: whisk together egg whites, sugar and corn starch, then bake it. Some people add food colouring or vanilla extract, or bake it into the shape of a love heart.
As if that’s not the softest bread you’ve seen in your life. Wonder White whomst?
The videos are also so soothing to watch and I wanted to do the thing where I pull it apart slowly.
The whole process took a lot longer than expected, but it was worth it because it tasted delicious. And making it was a fun way to work out some pent up rage (I’m fine).
Here’s a step-by-step guide to making the TikTok cloud bread:
1. Prep your three ingredients
You’ll need three egg whites, 30 grams of white sugar and 10 grams of cornstarch. I’d recommend getting these sorted and setting aside before you begin, because you’ll need to whisk everything pretty aggressively and you don’t want to stop and start to measure things.
Also set aside whatever food colouring and flavours you want to add. For my cloud bread, I decided to go with a starry night sky theme, using blue food colouring, candy stars, and hundreds and thousands.
2. Consider an electric mixer
Begin by giving your egg whites a quick whisk until they start to get bubbly. Add in the sugar and corn starch, then whisk until you think your arms are about to fall off.
Seriously, I cannot emphasise enough how long it takes to whisk this mixture until it forms stiff peaks. Set aside at least 20 minutes and try to have your housemates on standby to take over.
3. Set a timer because she don’t need long in the oven
After your 20 minutes of whisking, congrats! You only need another 25 minutes to bake it in an oven that’s been preheated to 150 degrees celsius.
Once your mixture has formed soft peaks, turn it out onto a tray lined with baking paper. Most people on TikTok create a large circular bun of cloud bread. If you’ve done it right, it should hold its shape pretty well so you can bake it into different shapes.
Just keep in mind that it’s going to expand in the oven and get extremely fluffy.
4. Serve and enjoy
Look, I will say that the TikTok cloud bread looks better than it tastes. It’s a vibe, not so much a delicacy.
My cloud bread tasted a bit like something I made when I was a kid and threw random ingredients into a bowl to see what would happen. But it was incredibly sweet, and fluffy, and light, and after eating a little square I wanted to go back for more.
I’d also have no shame in eating the entire thing in one sitting. It’s egg whites and, like, 2 and a half tablespoons of sugar, it’s practically healthy.
I’ll also note that it looks prettier on the inside than it does on the outside. Mine was a light blue but the crust and sprinkles turned brown in the oven.
I will say that it’s a fun way to spend 45 minutes of your time, especially if you haven’t posted on Instagram in a while and want something pretty that will impress people in the comments.
